General Conference weekend!

I'm ready...Oh so ready. My lamp is running low on oil these days. My mind is constantly going and I've had quite a few sleepless nights. I always want to KNOW everything. Why, where, when.... but sometimes I have to remind myself that those answers aren't up to me. It's not my plan. It's HIS. I've been feeling a bit lost and confused which only means it must be approaching my favorite part of Spring.. General Conference. I am so grateful for the guidance it provides. I can't wait to spend this weekend filling up my lamp, and soaking up the advise and love that our sweet leaders have to share. Happy Conference weekend to you!!

Happy Hump day!

So today is my hump day and boy was I feelin' it. I woke up this morning having one of those moments where your body is so sore you actually think you might need a doctor. (dramatic I know, but we've all been there;). When you think that just sitting to use the restroom will never be the same. Or getting in and out of your car is a 3 min ordeal in it of itself. Eek. In less words. I'M SORE. Determined to make it the gym before work I wasn't exactly sure what I'd be able to do. I needed to get my legs moving so I thought I'd start with a light 15 min jog on the treadmill. To my surprise my legs were grateful just to shake up a little of that lactic acid. I then decided to move over and try the row machine for another 15 min. Ps. if you have never done the row machine...15 min is awfully long time. Just sayin:) But again my body was happy just to be moving. I finished on the bike determined to stick to my on going trend of 15 minutes. It was rough I'm not gonna lie. I was sweaty and tired but feeling 100 times better than I had just 45 minutes earlier. Never has this quote been more true:

I already feel better about this hump day. I definitely left the gym with a sweaty smile on my face and feeling about 500 calories lighter. The cement in my legs has softened and I'm ready to go to work and have 2 awesome shows! I hope this hump day (Thursday) is treating you well!

BTW.. I signed up for my first Rhino course. Have you ever done a Rhino? What are your thoughts? All I know is that it's 4 miles, 100 obstacles and that I am officially CRAZY!! Wish me luck!

A day in the kitchen!

Today's dinner is all thanks to Pinterest. I am constantly pinning "delicious dishes" but rarely gain the courage to actually try them. I must say it turned out pretty good and I had a blast in the kitchen! I am already loving this month's cooking goal!

On the menu:
Penne pasta with roasted asparagus
and balsamic butter sauce.
Ps. I added the mushrooms for some extra flavor. I'd recommend it.

Cucumber, cottage cheese, basil boats.
(how stinkin cute are these?)

and chocolate dipped clementines for dessert.

What's for dinner at your house? I'd love to hear!

Penne Pasta recipe:

  1. 1 pound asparagus
  2. 1 tablespoon olive oil
  3. 2 teaspoons salt
  4. 1/2 teaspoon fresh-ground black pepper
  5. 1/2 cup plus 2 tablespoons balsamic vinegar
  6. 1/2 teaspoon brown sugar
  7. 1 pound penne
  8. 1/4 pound butter, cut into pieces
  9. 1/3 cup grated Parmesan cheese, plus more for serving
  1. Heat the oven to 400°. Snap the tough ends off the asparagus and discard them. Cut the spears into 1-inch pieces. Put the asparagus on a baking sheet and toss with the oil and 1/4 teaspoon each of the salt and pepper. Roast until tender, about 10 minutes.
  2. Meanwhile, put the vinegar in a small saucepan. Simmer until 3 tablespoons remain. Stir in the brown sugar and the remaining 1/4 teaspoon pepper. Remove from the heat.
  3. Cook the penne in a large pot of boiling, salted water until just done, about 13 minutes. Drain the pasta and toss with the butter, vinegar, asparagus, Parmesan, and the remaining 1 3/4 teaspoons salt. Serve with additional Parmesan.

Orange and Royal blue!

So lately I have been obsessing over this color combo. I have somehow managed to wear it almost everyday this week. Yesterday at our dancer meeting I spotted this beauty from across the room....

I KNOW!! My jaw dropped to the floor as well. I'm not sure if you can tell but it's Burberry and it's the most gorgeous orange leather bag I have ever seen. Plus it just so happened that it matched my outfit perfectly that day...

Again I KNOW!!! I have decided that I need that bag. Yes all $1600 dollars of it. It's just too good. Oh how I will dream of owning that bag for the rest of my life...mmm

Las Vegas Color run 2012!

I had to share a few pictures from this fun day. Mostly so that I can document that I actually did it ;). I was giddy to run my first race. I have never been a runner until just recently. I have such an energy and love for it these past few months. I know..it's crazy!  I am excited for many more runs in my future!

My "M" March Madness goals!

1. Make a delicious dinner at least once a week for dad and I.

2. Make my bed each morning.

3. Make it a money saving month.

4. Must wash AND fold the laundry each time I do a load. (avoiding the piles of clothes in the living room for a week;)

5. Make me time a priority before bed. Gonna try and turn off the cell phone and computer by midnight.

I'm motivated and excited about these goals! I think it's important to give yourself something to work towards each month. Just one more reason to get up early and get your day started right! What are your goals? I'd love to hear them! Happy March my friends!
